Corn Fritters- Snack For Rain

So, its raining these days and everyone is cooking various pakodas and stuff. But we The Madcap Girls wanted to try something new and thus we made 'Corn Fritters'. We've provided you with the recipe and step by step photos to make your cooking easy.

Enjoy the rains.



INGREDIENTS
Onion, 1Fresh Green Chili, 1Garlic Cloves, Coriander Leaves, American Sweet Corn, All Purpose Flour/Maida, 3 tablespoons CornFlour, Salt to taste and Pepper and Oil for Deep Frying
METHOD
1. grind together onion, red chili, garlic cloves and coriander leaves in a blender with a little water until everything is smooth and paste like.

 2. Boil the corn for 5 minutes to make them soft.





3. Add in the sweet corns, flour, corn flour, salt and pepper to the paste me made before and mix. You should have a thick batter.





4. Heat the oil in a non-stick pan and with a spoon add tiny bites of the mixture into the hot oil. Let one side cook for a while then turn them and let the other side cook properly. Be patient





5. Serve it in a plate with tissue on it so that the access oil is soaked out.


6. Serve immedately.

Achari Chicken- Fresh from the Kitchen





We prefer to do quick cooking.
 EASY, TASTY AND PROMPT COOKING.

Recipe for Achari Chicken is below, with step by step photos to help you cook easily. :)



INGREDIENTS

Chicken - 1 kg
Curd - 200 g
Onions (sliced)- 2
Tomatoes (sliced)- 2 or 3
Kalonji - 1/2 tsp
Jeera - 1/2 tsp
Rai - 1/2 tsp
Methi - 1/2 tsp
Red Chilli powder - 1 tsp or according to your taste
Coriander leaves, chopped for garnishing.
oil- 3tbs 
salt to taste






METHOD









Clean chicken and mix all the ingredients except oil, tomatoes and corriander leaves.


Cut tomatoes into tiny cubes.



Add oil in a pan and after heating it add the marinade which was in the fridge for the past 1 or 2hrs. And after two minutes add the tomato cubes.



Slowly it will start changing the color. Place a lid over the pan and let the gravy thicken.



When its thick and you get the sensual smell of the ingredients you had put, turn off the gas.


Serve Immediately, with Roti. Due to the thick gravy, one cannot really eat it with rice.

Salads and Us




During summer, we all prefer to eat less oily food and mostly salads and drinks. So why not have a post about two of the easiest salads you can eat during these days.

Enjoy these refreshing salads and drool over them at your home. Easy to make and good for your health. 
Are you diet concious but you dont want to compromise with the taste? These two salads are just perfect for you. RECIPE is provided below.



INGREDIENTS

American Corn, onions, tomatoes, bell pepper, chilly flakes, oregano, salt to taste, black pepper, black salt, corriander.

METHOD

Saute all the veggies together in a pan for 5 minutes. Add American corn and then add chilly flakes, oregano, salt to taste, black pepper and black salt.
Serve in a bowl. Decorate it with corriander leaves. 
Can be served hot or cold. 




INGREDIENTS

Elbow macaroni, tomatoes, onions, cucumber, green chilly, chilly flakes, oregano, black pepper, black salt, salt to taste.



METHOD

Boil macaroni till its soft.
Cut all the veggies into tiny pieces and mix them into a bowl.
Add macaroni into that bowl and add chilly flakes, oregano, black pepper, black salt and salt to taste. Mix wisely. 
Decorate it with corriander leaves.
Serve with your dinner and your guests will love it.

Red Sauce Chilly Pasta



Pasta lovers, we bring you the easiest and an innovative recipe of THE RED SAUCE CHILLY PASTA/ MACARONI. This name is a bit unfamiliar, right? Indeed because we have used our own minds to make this recipe and now here we are sharing it with y'all. Hope you enjoy it. 



INGREDIENTS

1. Pasta/ Macaroni 
2. Onion, Garlic, Ginger
3. Tomato puree/paste
4. Soya sauce, vinegar, tomato ketchup
5. RED PEPPER SAUCE ( HOT AND SPICY)
6. Oregano
7. Salt and black pepper
   










METHOD

1. Heat the pan and put butter into it.
2. Meanwhile make a puree of tomatoes, ginger and garlic. Also add the RED PEPPER SAUCE into the puree and mix in the mixer along with the puree.
3. Add onions and saute them till golden brown.
4. Then add the puree into the pan and on high flame let it become gooey and loose the butter from sides. Also add salt to taste and black pepper before the puree dries up.
5. Finally, add pasta into the puree and mix slowly.
6. Add all the sauces but very little amount of each of them.
7. Taste the dish and if its too spicy add a little bit of tomato ketchup and if you want it to be more spicy add the RED PEPPER SAUCE to it.
8. Turn off the flame and add oregano to it. 
9. Serve hot.











This RED PEPPER SAUCE, is our HERO. We've added just the right amount of heat to our pasta. Its upto you to use this sauce according to your taste. All we can tell you is IT IS INDEED HOT, so use it wisely.




The pasta was gooey and yummy with a little spice. The perfect red color just melted our hearts. 






We also ate the pasta as our breakfast in the next morning. Leftover food should not be wasted, rather should be consumed or given away to a poor person. Wasting food is wrong at many levels. Remember, there are tons of people who cannot afford food for themselves.

Easy Cooking- Paper Dosa

South Indian Food lovers, this is your chance to learn the easiest ways how to make Paper Dosa at home. Make this yummy dish on a sunday morning for your family and see the smile on their faces.

ENJOY





Ingredients


1/2 cup raw rice 
3/4 cup urad dal 
1/2 cup rice flour 
salt to taste
ghee for greasing and cooking




For Serving


coconut chutney

sambhar



Method



  1. Wash and soak the raw rice and urad dal separately for 3 to 4 hours and drain well.
  2. Combine the rice, urad dal and rice flour and blend in a mixer to a smooth paste using enough water to get a batter of thick pouring consistency.
  3. Add the salt and mix well.
  4. Heat a non-stick tava (griddle) and grease it lightly using ghee.
  5. Sprinkle a little water on the tava (griddle) and wipe it off gently using a cloth.
  6. Pour a ladleful of the batter on it and spread it in a circular motion to make a 225 mm. (9”) diameter thin circle.
  7. Smear a little ghee over it and along the edges and cook on a high flame till the dosa turns brown in colour and crisp.
  8. Fold over to make a semi-circle or a roll.
  9. Repeat with the remaining batter to make 9 more dosas.
  10. Serve immediately with coconut chutney and sambhar.







As you all can see in the pictures, the plate has Mashed potatoes as well. So if you want you can make the "ALOO KA BHARTA" and keep it in the centre of your dosa that you prepared or you could also keep it in the plate along with the other items. 
Totally upto you and your taste.















We were helped by our moms to make the batter. BEST MOMS EVERRR :D

MUMBAI MAST PULAO - MUMBAI'S STREET FOOD IN YOUR PLATE

.



We all love street food , don't we? Indian street food is one of its kind. Visit whichever part of the country , you will indulge in some heavenly and 'heavy' street goodness!

Mumbai is famous for three things. Juhu Beach , Bollywood and  street food.
Here we have a very popular street food straight-from-the-streets-of-Mumbai ( well, not literally ).
we have a spicy , tangy superbly delicious Mumbai mast pulao just for you.

INGREDIENTS.
Vegetable Oil - 1 tablespoon
Mustard seeds - 1  handful
Dry Red Chillis - 2-3
Curry Leaves - 4-5
Chopped garlic - 1 teaspoon
chopped onions - 1
chopped seasonal vegetables ( i.e whatever veggies you have in your fridge ) - 2 cups.
chopped tomatoes - 1
Salt - according to taste
Red paprika - half a teaspoon
Coriander powder - half a teaspoon
turmeric - a  pinch
Pao bhaji masala ( a secret ingredient no one's gonna tell you about ) - 1 teaspoon

Preparation

Heat your wok and add oil. Once the oil is hot enough , add mustard seeds and wait for it to crackle. Add dry red chillis and curry leaves and saute for a few seconds. Add garlic . Wait for it to brown a little before adding in the onions and veggies. ( bell peppers are recommended ).  Saute them for a few minutes and put in tomatoes. Then add all the spices . PS-  do not add garam masala if you are adding pao bhaji masala. the pao bhaji masala has abundance of it.



Saute the veggies and add in your boiled rice. ( again, you might find some leftover rice from last night in your fridge ) . All you need to do now is coat the rice with the tadka you just made and turn off the heat.



  Garnish with some coriander. serve it hot with some cold curd or even without it.

Shahi Paneer, with love from Ma

Can anything ever beat home made food? NOTHING AT ALL.
Our moms are our favorite cooks. And some dishes are related to our childhood, whenever we eat it we remember those days when we were small and young and nothing worried us.

So, did Nostalgia hit you? We know. Happens.
Here is one of ours childhood dish that brings back so many memories.

And we are here to share the recipe with you. Enjoy.



So, below we have steps, ingredients, method and pictures depecting all this. Just to make it easier for y'all :)




  • Cut the Paneer into cubes.




  • Cut 2 bell pepper and few corriander leaves.




  • In the mixer add 5 tomatoes, ginger and garlic and blend it to make a paste. The paste is not too thick. Medium consistency.




  • Add Almond and cashew and make their paste in the mixer.




  • Add fresh cream in the mixer and blend it to medium consistency.






  • MASALA-
  1. SHAHI PANEER MASALA- 2 table spoon
  2. DRIED FENUGREEK LEAVES- 1 table spoon 
  3. RED CHILLI POWDER- 2 table spoon
  4. HALDI (TURMERIC) POWDER- 1 table spoon
  5. GARAM MASALA- just a pinch of it
  6. SALT TO TASTE
  7. DRIED RED CHILLI- 2
  8. CUMIN SEEDS- pinch of it






  • All the ingredients should be assembled in advance so that there is no chaos while cooking.



  • Turn on the gas and pour oil after the pan is a little hot. And then let the oil get a little hot as well.


  • When the oil is hot enough, add cumin seeds and dried red chillies.


  • Just after 5-10 seconds add the tomato puree and leave it to dry up for atleast 5-7 minutes.



  • When the gravy starts leaving the oil from the corners, add red chilly powder, turmeric powder, garam masala powder and salt to taste.




  • After this, put a lid on and let the masalas mix with the gravy for the next 3-4 minutes.
  • Then add the bell peppers slowly. 
  • You can observe the change of color in the gravy.



  • Now, add shahi paneer masala ito the gravy and now your gravy is thick enough and looks red and yummy. Like in the picture.





  • Then we add our almond and cashew paste into the gravy. And just after mixing it we add the fresh cream as well. The kitchen will be filled with an amazing aroma. Agreed?
  • And now the color will become lighter and the gravy will become smoother.
  • Stir well.






  • Finally, add one cup of water. To lower down the consistency of the gravy. But not too much of water. 



  • Add paneer
  • Mix slowly





  • Just before switching off the gas, add dried fenugreek leaves and stir.



  • Well, we believe in presentation, so for garnishing we used corriander leaves.
  • We ate shahi paneer with Rice. You can eat it with anything you like.





  • THE LUNCH IS SERVED, MY CHILD :D





Honestly, this dish is for the die hard foodie who does not really care about his/her diet. LOL
