MUMBAI MAST PULAO - MUMBAI'S STREET FOOD IN YOUR PLATE

.



We all love street food , don't we? Indian street food is one of its kind. Visit whichever part of the country , you will indulge in some heavenly and 'heavy' street goodness!

Mumbai is famous for three things. Juhu Beach , Bollywood and  street food.
Here we have a very popular street food straight-from-the-streets-of-Mumbai ( well, not literally ).
we have a spicy , tangy superbly delicious Mumbai mast pulao just for you.

INGREDIENTS.
Vegetable Oil - 1 tablespoon
Mustard seeds - 1  handful
Dry Red Chillis - 2-3
Curry Leaves - 4-5
Chopped garlic - 1 teaspoon
chopped onions - 1
chopped seasonal vegetables ( i.e whatever veggies you have in your fridge ) - 2 cups.
chopped tomatoes - 1
Salt - according to taste
Red paprika - half a teaspoon
Coriander powder - half a teaspoon
turmeric - a  pinch
Pao bhaji masala ( a secret ingredient no one's gonna tell you about ) - 1 teaspoon

Preparation

Heat your wok and add oil. Once the oil is hot enough , add mustard seeds and wait for it to crackle. Add dry red chillis and curry leaves and saute for a few seconds. Add garlic . Wait for it to brown a little before adding in the onions and veggies. ( bell peppers are recommended ).  Saute them for a few minutes and put in tomatoes. Then add all the spices . PS-  do not add garam masala if you are adding pao bhaji masala. the pao bhaji masala has abundance of it.



Saute the veggies and add in your boiled rice. ( again, you might find some leftover rice from last night in your fridge ) . All you need to do now is coat the rice with the tadka you just made and turn off the heat.



  Garnish with some coriander. serve it hot with some cold curd or even without it.
